Boletus edulis, Cep, Penny Bun, Porcini. One of the most popular edible mushrooms, appearing quite commonly under or near mature trees most years. Giant specimens are sometimes found, with a cap diameter of over 30cm. The smooth brown cap often has a thin white rim, and very small cream-coloured pores beneath. In most species of Boletus it is advisable to remove the pore layer before cooking, as it is spongy and unpleasant (though not poisonous) but in a Cep in good condition you can eat the lot, including the very stout stem, which is solid and white-fleshed.
